Restaurant in Braunschweig persists - "Refused to abandon patrons"

In the heart of Brunswick, Der kleine Vegetarier 2 on August Street has undergone a remarkable transformation, thanks to the courage and determination of its new owner, Sabrina Geßler. The restaurant, which was left in a precarious financial state following the sudden death of its former owner, Richard Liedtke, in early February 2025, has been successfully revived by Sabrina, who took over the establishment without any start-up capital.

Sabrina, who started as a minijobber at the restaurant ten years ago, had become Liedtke's most trusted right-hand woman, helping both professionally and personally. After receiving the news of Liedtke's death, she consulted with her wife and, despite feeling like a "leap into cold water," decisively took on the challenge.

A key factor in Sabrina's successful restart was the support she received from the restaurant's steady clients. The establishment supplies vegetarian lunches to Braunschweig kindergartens and offers catering services. These established clients provided advance payments, enabling Sabrina to cover initial expenses during the difficult restart phase.

The premises, which had remained unchanged since the 1950s, were renovated, with Sabrina completely modernizing the interior. The new interior features an elegant dark wood counter and a picture of the former owner now adorns the heart of the restaurant, serving as a poignant reminder of Liedtke's legacy.

Sabrina felt a heavy loss with Liedtke's death but knew she had to carry on. She emphasized her commitment to the community and to Liedtke's legacy as key motivations. The children's gardens in Brunswick, long-standing customers of the restaurant, supported Sabrina during the challenging initial phase.

Today, around 15 regular customers visit daily to enjoy the vegetarian dishes and family-like atmosphere at Der kleine Vegetarier 2. The restaurant is currently lacking money for a neon sign, but Sabrina remains undeterred, demonstrating the same courage and determination that has carried her through this journey.
