Dry Porcini Mushrooms at Home in the Oven
Drying porcini mushrooms at home in an oven is a convenient alternative to using a dehydrator. This method preserves the mushrooms for long-term storage, retaining their unique aroma and flavour.
Before drying, clean the porcini mushrooms carefully but without rinsing under running water. Instead, use a dry cloth, brush, or kitchen towel. Cut away any damaged spots and for stubborn dirt, use a damp cloth or knife tip sparingly, then dry immediately. Soak the mushrooms in water or red wine for half an hour before slicing them about five millimetres thick.
To dry, place the slices on a baking sheet and set the oven to 40-50 degrees Celsius. Dry for about three hours, keeping the oven door slightly open to allow moisture to escape. The mushrooms are ready when they are completely dry inside but still slightly elastic.
Store dried porcini mushrooms in an airtight, dark, and dry place to maintain their quality. This simple oven-drying method ensures you can enjoy these delicious mushrooms year-round.
